Makes 5 servings:
1 package 99% lean ground turkey breast (about 1 1/3 pounds) 2 red bell peppers 3 green bell peppers 1/2 cup Pace* picante sauce (I like Hot) cumin cayenne pepper chili powder
Spray large pot with non-stick cooking spray. Chop peppers into 1 inch pieces and put in pot. Cook until tender. Add ground turkey breast into pot, stir to break up. Add a few shakes of cumin, a few shakes of cayenne and a lot of chili powder. When the turkey is cooked through add the picante sauce and stir for a few seconds. Turn off heat and you're done!
Separate into five containers for five servings each: 152 calories 1.4 g fat 11 g fibrous carb 3 g fiber 26 g protein
If I'm having a carb with it, I add it to my individual serving before eating - usually low sodium black beans or corn or occassionally brown rice.
*I use Pace because there is no sugar in their salsas or sauces. You can also use homemade.
