Cooking spray * 1 medium onion, finely chopped * 2 garlic cloves, finely chopped * 3 green peppers, cut into 1 inch pieces * 1 tbsp cumin * 1 tsp paprika * 1 tsp cinnamon * 1 tsp ginger * 1/2 tsp allspice * 5 medium boneless, skinless chicken breasts, cut into cubes * 1 cup fat-free, reduced sodium chicken broth * 1/4 cup chopped cilantro
PREPARATION:
Spray bottom of large pot. Add onion, green pepper and garlic and cook until onion and garlic are softened, about 5 minutes. Add cumin, paprika, cinnamon, ginger and allspice and blend well with vegetables.
Cook and stir for 2-3 minutes.
Turn heat up to medium-high and add chicken breasts. Cook for 5 minutes, turning occasionally. Add chicken broth and cilantro. Cover, reduce heat to low and simmer for 25 minutes.
Serve with your carb portion of garbanzo beans.
Makes five servings. Without garbanzo beans, each serving: 205 calories 4 g fat 10 g fibrous carb 2.8 g fiber 31.8 g protein
